Cinnamon Crumble Coffee Cake

This cinnamon crumble coffee cake is the perfect way to start your day!

Ingredients:

Coffee Cake

1 1/2 cups Authentic Foods Multi-Blend Flour
3/4 cup Granulated Sugar
2 teaspoons Baking Powder
1/2 teaspoon Salt
2 Eggs
3/4 cup Milk
1/4 cup Olive Oil
1/8 teaspoon Authentic Foods Xanthan Gum

Crumb Topping

4 tablespoons Butter
4 tablespoons Granulated Sugar
1/2 cup Authentic Foods Multi-Blend Flour
1/4 cup Authentic Foods Almond Meal Flour
2 teaspoons Cinnamon


Directions:
Preheat oven to 350°F. Grease an 8x8 inch or 9x9 inch pan.  Then follow the directions for the crumb topping and coffee cake.

Crumb Topping

Cut up butter into cubes. In a large mixing bowl, combine Authentic Foods Multi-Blend Flour, Authentic Foods Almond Meal Flour , granulated sugar and cinnamon.  Blend in the butter until the mixture has a crumb consistency.  Set aside to add to the top of the coffee cake.

Coffee Cake

Mix together Authentic Foods Multi-Blend Flour, sugar, baking powder, Authentic Foods Xanthan Gum and salt together. In another bowl, beat egg. Then add olive oil, followed by milk. Stir the liquids into the dry ingredients and mix together until a batter is formed. Pour the mixture into the greased pan and sprinkle with the crumb topping. Slightly pat crumb topping into the coffee cake batter. Then bake in the oven for 30 minutes. Let sit for at least 15 minutes. Then enjoy!
